The taste of melting hot goats’ cheese is, for me, one of the really supreme gastronomic pleasures. One day, I developed this dish entirely for my own satisfaction. Yellow tomatoes look especially pretty in the filling.


For the Pancake Batter

  • 4 tablespoons olive oil
  • 40g (oz) plain flour
