Onions are sweet, and chicory has a subtle bitterness, and this combined with a mild bite of chilli tastes excellent in this simple dish. Serve with good crusty bread to mop up the delicious juices.


  • 3 large chicory
  • 1 fresh red or green chilli

Cut off the base of the chicory and cut it across in 1cm (½-inch) pieces. Cut the chilli open under running water, discard the seeds and stem and then slice the flesh across thinly. Melt the butter in a large, deep frying pan over a medium heat
