Ingredients

  • 500g (1lb) jerusalem artichokes
  • ½ Chinese leaf (root end)

Method

If you are unable to get jerusalem artichokes, small turnips can be used very successfully, and if you cannot get Chinese leaf, savoy cabbage makes an excellent substitute.

Wash and scrub the artichokes very thoroughly but don’t peel them. Then slice the artichokes across in thin slices. Cut just the base off the Chinese leaf, then slice it across very thinly. Cut the chilli open length
