This light meal of avocados, filled with a mixture of sweet pepper purée and tomatoes, and topped with melted cheese is extremely good. Use really large avocados, and plum tomatoes if they are available, as their flavour is so much better for cooking. This dish will serve eight people for a first course. If you want a special treat, get the authentic Italian mozzarella di bufala, made with buffalo milk.
