One of the difficulties of making vegetarian main dishes is how to make them substantial but not stodgy. Pies are often a satisfactory solution. This is a lovely fresh-tasting pie which you can decorate to look inviting. Try to use plum tomatoes if they are available, as their flavour is much better. Serve this dish with new potatoes and a salad.
