The chocolate layers of this dramatic and delectable party piece are a cooked flourless cake. The fromage frais ice cream is like a very light cheesecake. Although I make this with marmalade, apricot jam is an excellent alternative.

Method

Make the chocolate layers in advance. Line two 22–23cm (8½–9-inch) sandwich tins with a piece of baking parchment and preheat the oven to
