This upside-down tart combines sliced apples with the wonderfully compatible flavours of cardamom, honey and orange, and the fine oatmeal gives the pastry a delicious nutty crunch. The tart can be made in advance, kept in the baking tin and reheated. I occasionally use a shallow heart-shaped tin which looks especially pretty for a party. If you can find them, quinces make a particularly good substitute for the apples but they will need to be cooked for a little while longer.
