Fresh apricots bought in the shops have often been picked before they are ripe, and their flavour is nearly always improved by cooking. This honeyed upside-down cake (which I also make with apples) is particularly successful. The pastry is easy and does not even need rolling, as you lay thin pieces over the fruit like a patchwork and it cooks into the most delicious, buttery pastry base when the tart is turned out.
