I first tasted these in the Outer Hebrides off the north-west coast of Scotland. We had them every day, either simply spread with butter or with locally made honey. They are perfect with cheese.

Ingredients

  • 125g (4oz) medium oatmeal
  • ½ teaspoon salt

Method

Set the oven to preheat at Gas Mark 5/190°C/375°F. Mix together the oatmeal, salt and bicarbonate of soda in a bowl. Bring the water to the boil in a small saucepan. Add the butter and stir until melted. Pour the liquid into the oat mixture and stir thoroughly until you have a fairly m
