These may be simple clear flavours but the silky sauce gives the dish a sophisticated edge.

Ingredients

  • 750 g (1 lb 10 oz) large and long potatoes, washed very well

Method

Lay the potatoes in the top section of a steamer full of well-salted water and steam for 20–25 minutes, taking them off when they are still undercooked. Allow to cool.

Preheat the oven to 180°C (350°F, Gas Mark 4) and line a baking tray with baking parchment.
