I have used ‘shop’ curry pastes in the past, but when you start making your own you soon realise the difference. The curry paste can be made using either a mortar and pestle or a food processor.

  • 2 large lobsters, weighing 750–800g (1 lb 9oz

Method

To make the curry paste, pound or blend all the ingredients. These amounts make 60–70g (2 ¼–2 ½oz) paste, and the rest can be stored in the fridge for a week.
