Fresh Cherry Chutney

Ingredients

  • 8 cups ripe fresh cherries, pitted
  • ½ cup red wine vinegar
  • ½ cup dark brown sugar
  • ¼ cup molasses
  • 4 cloves garlic, peeled, chopped
  • 3 bay leaves
  • 3 fresh chilies, serrano or jalapeno— stemmed, seeded, chopped
  • 6 whole cloves
  • 1 tablespoon green peppercorns
  • 1 teaspoon ground cinnamon
  • ½ teaspoon freshly ground nutmeg
  • 1 teaspoon salt
  • ½ teaspoon freshly ground pepper

Method

Combine all the ingredients in a stainless-steel pot. Cook covered for 30 minutes over low heat, stirring every 15 minutes. Uncover and continue to cook, stirring often, until the mixture is the consistency of jam, about 30 more minutes. Always keep ¼ inch liquid on the surface. If the chutney starts to dry up or stick to the pot, add ½ cup water at a time.
