Cilantro-Lime-Ginger Butter

Ingredients

  • ½ pound unsalted butter, at room temperature
  • 2 teaspoons grated fresh ginger
  • 10 sprigs fresh cilantro, stemmed, chopped
  • 2 tablespoons fresh lime juice
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground pepper

Method

Combine all the ingredients in a food processor and puree until smooth. The butter should be silky. Let sit 2 hours. Serve at room temperature (never cold), so that it melts easily over the food.
