This is a great party snack. It may not sound like much when reading the recipe, but the tastes and presentation are wonderful. Once you have double-peeled the favas, that is.

For serving, you will need 16 Chinese spoons, or keep cleaning and re-using 8 of them. Garnish the tray with herb flowers or nasturtiums.


  • 3 pounds young fava beans in their pods
  • 2 tablespoons fleur de sel sea salt


Take the fava beans out of their pods and peel off their skins. Discard the pods and skins.

Chop the favas coarsely and divide equally among 16 Chinese spoons. Sprinkle with the sea salt, put on a tray, and serve.
