Even without lemons right off the tree in one’s backyard, this is a fast and easy, delicious dessert.


  • 2 cups freshly squeezed lemon juice, strained
  • cups superfine sugar
  • 3 cups warm water
  • ¼ cup Absolut citron vodka
  • ½ cup vodka
  • 1 lemon


Put the lemon juice, cups of the sugar, and the warm water in a bowl. Stir until the sugar is completely dissolved. Add the two vodkas and mix again.

Pour the liquid into a glass or metal loaf pan and put in the freezer.

When the liquid has started to set, break it up and mix with a fork to make sure all the alcohol is evenly distributed. Keep doing this every 20 minutes, until the mixture is entirely frozen and smooth.

Just before serving, break up the lemon ice again. Cut the lemon into -inch slices, remove any seeds, and dip both sides of each slice into the remaining ¼ cup sugar. Scoop the lemon ice into frozen martini glasses and serve with the sugared lemon slices on the rim of the glass.
