Also called beurre noisette in French because of its nutbrown color—any darker and you have burned it! The flavor is very special.

Ingredients

  • ½ pound unsalted butter

Method

Melt the butter in a small saucepan over medium heat and cook until nut brown. Strain through a sieve lined in cheesecloth and set aside until needed.
