Ingredients

  • 3 cups water
  • cups fresh spearmint or peppermint leaves

Method

  1. Bring water to a boil.
  2. Add mint leaves and turn off heat.
  3. Steep for 15 minutes.
  4. Strain tea.
  5. Add vinegar, pectin, butter, and food coloring (if using).
  6. Stirring constantly, mix well and bring to a boil.
  7. Add sugar and return to boil.
  8. Boil on high for 1 minute.
  9. Remove from heat and skim off foam
