3 cups water
1½ cups fresh spearmint or peppermint leaves
- Bring water to a boil.
- Add mint leaves and turn off heat.
- Steep for 15 minutes.
- Strain tea.
- Add vinegar, pectin, butter, and food coloring (if using).
- Stirring constantly, mix well and bring to a boil.
- Add sugar and return to boil.
- Boil on high for 1 minute.
- Remove from heat and skim off foam
