The name diablito is always a clue that there are hot chiles present—in this case, sharp little serranos whose spice is tempered with sweet mango. For a great summer variation of this spicy tequila, substitute two pints of cherry tomatoes for the mango. In winter, substitute a handful of chopped pineapple.

The recipe can be used as the basis for any infused tequila or mezcal. Use the variations suggested below or make up one of your own.
