The vampira is tall, spicy, tart, and refreshing. It’s essentially a revved-up version of the margarita with the barest touch of Clamato and spicy edge, and just as brunch-friendly as the Bloody Maria. This excellent version of the cocktail is served at Restaurante Romesco in San Diego, where it is made with a high-end tequila and a dash of Clamato.

Ingredients

  • Ice cubes
  • Pinch of salt
  • ounces 100 percent agave blanco tequila
  • 1 teaspoon Mexican hot sauce such as Cholula
  • 1 ounce Clamato juice
  • 1 ounce fresh-squeezed lemon juice
  • Mexican Squirt or other grapefruit soda

Method

Fill a 10-ounce glass with ice cubes. Scatter salt on the ice. Pour in the tequila, hot sauce, Clamato, and lemon juice, and top up the glass with the grapefruit soda. Garnish with a lemon wedge.
