It’s fine for taco fillings to have a little spicy zip—chiles bring out flavor in much the same way as salt and lime—but serious heat should only be added judiciously by the individual diner in the form of a good hot salsa, so that everyone may adjust the taco to taste. This particular sauce, made from dagger-shaped chiles de arbol, has an enjoyable sharp heat that quickly dissipates. (In fact, the salsa itself will not be as hot after an hour or so.) It is excellent on anything rich or cheesy.
