Pale green and lovely, with a nice tartness balanced by creamy avocado, this is winner on everything. It may be used in place of avocado cilantro sauce on tacos, or as a quick alternative to roasted tomatillo salsa.
In a food processor combine the avocado, tomatillos, chile, garlic, onion, and salt. Pulse until the sauce is pureed. Add the chopped cilantro and pulse several more times. The salsa will keep, refrigerated, for 24 hours. Reseason before use.
