Cookies and cream consistently ranks as one of the top five ice cream flavors across the country. There’s something magical yet so simple about the combination of sweet cream and sandwich cookies. At Ample Hills, we’ve taste-tested nearly every Oreo-type knockoff out there (someone had to do it!), searching for the very best—the most chocolatey chocolate cookie and the creamiest cream filling—and our choice is Back to Nature Classic Creme Cookies. But please, experiment and find your favorite!

Ingredients

  • 1 (12-ounce/340-g) box or about 25 sandwich cookies, such as Back to Nature
  • 1 recipe Walt’s Dream

Method

  1. Place 6 cookies in the freezer for 1 hour. Transfer the cookies to a small food processor and process them into crumbs. Or, for slightly more fun, place the cookies in a zip-top bag and pound them with your fist! Set this cookie “powder” aside.
  2. Prepare Walt’s Dream according to the recipe directions. Transfer the cooled base to an ice cream maker and add the cookie powder. (This flavors the ice cream itself with the cookies and their cream filling.) Churn the ice cream according to the manufacturer’s instructions.
  3. Break the remaining cookies into quarters. Transfer the ice cream to a storage container, folding in the cookie pieces as you do. Serve immediately or harden in your freezer for 8 to 12 hours for a more scoopable ice cream.
