Method

  1. Halve the vanilla bean and scrape out the seeds; discard the pod. In a small saucepan, add the seeds and the butter. Place over medium heat and stir until the butter is completely melted.
  2. In the bowl of a stand mixer fitted with the paddle attachment, combine the sugar, vanilla, salt, and egg whites. Mix on medium speed until well combined and smooth.
