This typical appetizer is from Tabernas, in northeastern Almería province, which has been the location for numerous blockbusters set in the desert, thanks to its stark karst landscapes. Diego maintains that zaramandoña is rare these days, although it is a cousin of Granada’s much more common remojón. He suggests replacing the red pepper with green, and adding a handful of chopped black olives.
