In Latin America, the term pionono is applied to countless types of wraps, whether sweet or savory. But here, “It’s the most typical dessert in Granada!” the waiter exclaims, as he proudly places a plate of them in front of me. He is right—these bite-size cakes appear in patisseries all over the city. Casa Ysla claims “the original” from Santa Fe, just west of the city, where they were allegedly invented in honor of a visiting Pope, none other than Pio Nono, in 1897. Santa Fe’s first
