This grand old andalusí recipe remains a firm favorite in Andalucía as it makes a sustaining yet refreshing salad during the winter orange season. Countless variations exist from Almería to Córdoba, but Granada tends to claim ownership, proved by the adjective here, granadino. The addition of shrimp and endive is unusual, but raises it from a simple salad to a more sophisticated main course.
