The name of these soft cheesecakes derives from the Arabic al-muyabannat meaning, quite simply, “made with cheese.” They may look quite solid, but are actually light as a feather, with an added crunch. Charo suggests serving them in pairs, sandwiching the pieces with a slice of goat cheese or quince paste.
