  • 1 lb (500 g) day-old sourdough bread, loosely shredded
  • 4–5 garlic cloves, peeled and chopped

Method

Soak the bread in just enough water to cover for 5 minutes until it swells up nicely. Remove the bread and squeeze dry. If you like you can remove the crust, but it’s not essential.

Tip the bread into a food processor with the garlic and a pinch of salt and blend to a smooth paste. With the machine running, add the oil in a trickle, then the vinegar. Continue to blend until you have a f
