This light tartare can be an appetizer or a main course—it is easy to adjust the quantities, or even vary some ingredients; for example, you can substitute tuna for salmon. Try Charlie’s version though, since the ginger and the asparagus give an unusual (Moorish) twist to what is quite a French classic. He often serves it with his hummus. The following recipe makes a generous appetizer.
