Ingredients

  • 3 egg yolks
  • 1 teaspoon mustard
  • Salt and white pepper

Method

Make sure all of the ingredients are at room temperature. In a bowl, beat together the yolks, mustard, salt, pepper, and vinegar with a fork until combined. Whisking continuously with a wire whisk, slowly add the oil (drop by drop at first). Once it starts to thicken, you can add the remaining oil in a thin stream, still whisking, ending with the olive oil. Store in a sealed jar in the refriger
