The tangy bitterness of the kumquats makes an unusual balance for the sweet honey of the sauce, raising a quality magret to heavenly heights. This is a quick dish to prepare with minimal ingredients—and of course the sweet and salty mix is truly Moorish. Mead is a sweet alcoholic drink made from fermenting honey with water. If you can’t find any, substitute dark clear honey with a strong flavor.
