It is very hard to come anywhere close to the quality of Andalusian tomatoes in summer. Only use the best in-season tomatoes to make this simple light appetizer that will counter-balance a heavier main course.
Core and thinly slice the tomatoes. Arrange the slices on a plate, scatter with garlic and oregano, season with salt and pepper, then trickle generously with olive oil. Serve immediately.
