Béchamel is a simple sauce and can be made very quickly. Like some other sauces that were supposedly created in the seventeenth century by the French, béchamel was allegedly already known in Italy, under the name balsamella. It was a sauce made from milk, flour and butter, and it was a vital ingredient of many pasta dishes, especially those made with lasagne.
