This sauce is very easy to make, but needs really good tomatoes, fresh herbs and good-quality extra virgin olive oil. It is fun to create new tastes by substituting herbs or adding different ingredients to the basic mixture.

Ingredients

  • 500 g/1 lb 2 oz fresh ripe tomatoes, peeled and seeded
  • 5 tbsp

Method

Chop the tomatoes and place in a shallow ovenproof bowl with the other ingredients. Stir well. Leave to marinate for at least 2 hours. It does not matter if you leave the sauce to marinate for longer.
