Don’t let the long list of ingredients put you off: once you have cleaned and cut the vegetables, the rest is easy and you can go and sit down.
It is best to make minestrone in large quantity. It tastes even better reheated a day or two later and it keeps well in the fridge for 2 or 3 days, although it does not freeze well. Add the pasta only just before you are going to serve it. This minestrone is also delicious cold – not chilled, but at room temperature.
