In northern Italy, food dressed only with butter is called ‘all’inglese’ – in the English style. However, a lot of Parmesan is also added for good measure, and it is indeed a very good measure. Try to get the best unsalted butter; some Italian ones are now available in many supermarkets and delicatessens. Expensive, I agree, but it makes all the difference.
