Courgettes are now available all the year round. Buy hard, shiny courgettes, neither too small – because baby courgettes have not yet fully developed their flavour – nor too big, because the big ones are full of seeds. The leeks should be thin, with fresh-looking green tops, which you don’t need for this recipe but can keep for a soup. The combination of these two vegetables, both rather sweet, is sharpened here by a glass of wine. This is a well-balanced mixture of different yet harmoni
