Pennoni, or large penne, are good for this sauce: they match the size of the vegetables. But you can use smaller penne or conchiglie, in fact any large short pasta. This dish is also very good cold. In the autumn you can make this with butternut squash, celeriac and small turnips instead of the aubergine, courgette and pepper, but in that case you would not serve this cold.
