An eighteenth-century Neapolitan recipe by the Prince of Francavilla. This nobleman created quite a few excellent recipes; he used to dictate them to his secretary, Vincenzo Corrado, who revised and published them in a book called Il Cuoco Galante, which became a bestseller. I have been unable to find out why this dish – originally made with capon breast – is dedicated to Madame de Pompadour, the mistress of Louis XV of France.
