A very attractive, delicious and different dish, which is always a success. It takes a bit of time and care in the making, but it is well worth the effort.

It is difficult to state the precise quantity of raw spinach you need to start with, because it depends so much on the type of spinach: with some kinds you can use everything, with others you have to discard the tough larger stems. So here I give the weight of the cooked spinach.
