This is my adaptation of the first recipe for ravioli – Rafioli comun de herbe vantazati, ‘common ravioli with leaves’. It is from a collection of recipes by an unknown Venetian – ‘anonimo veneziano’ – who was writing in the late fourteenth and early fifteenth century. Ravioli di magro – ‘ravioli for a meatless day’ – are still made in the same way.
