This is quite a time-consuming dish to make, but the end result looks marvellous and tastes delicious. I am not giving instructions on how to make the sweet pastry; follow your usual recipe, starting with 450g flour.
First make the pastry in your usual way. Wrap it in clingfilm and put it in the fridge.
