Ready-made maccheroni alla chitarra or square spaghetti is available, but you can make your own (see note). The Molisan sauce doesn’t take much longer than the pasta to cook.
For the pasta, put a large pan of salted water on to boil.
For the sauce, heat the butter and olive oil in a pan and gently fry the onion with the garlic until soft. Add the ham and sauté briefly, then add the basil, parsley, chilli and wine. Cook for 3 minutes, then add the tomato pulp and season with salt and pepper to taste. Cook for a further 3 minutes, then the sauce is ready.
