Borage leaves are very substantial, ideal for making this dish, which was suggested by my sister Anna in Italy. It can be either a starter or main course, depending on the size of the leaves.

Ingredients

  • 8 tender, fresh borage leaves, washed
  • 2 medium eggs
  • 2 tbsp coarsely chopped fresh dill

Method

Shake most of the water from the borage leaves, which should be the size of an open hand. Beat the eggs, and add salt and pepper along with the dill.

Dip 2 leaves at a time into the flour, shaking off any excess. Then dip them into the egg on both sides. Sprinkle one side of one of the leaves with a quarter of the cheese, and then join it to the other by pressing gently to form a ‘sandw
