To ensure a constant supply of hop shoots, I decided to grow a few plants in my vegetable garden, and they are a joy when in season.
Wash the hop shoots and drain well. Pour the oil into an old seasoned frying pan of about 20cm (8 in) in diameter (or a non-stick pan), and heat. Add the hop shoots to the oil, frying gently until they soften, a few minutes only. Beat the eggs, then add the Parmesan and salt and pepper to taste. Pour into the frying pan, and raise the heat slightly to fry one side of the omelette to golden brow
