It is a Tuscan and Roman custom to taste the first fresh vegetable of the season, raw and dipped into extra virgin olive oil from the last olive harvest. These vegetables, accompanied by bread, make an ideal starter for a springtime or early summer meal. Marsh thistles are only one amongst a long list of vegetables that can be used similarly, such as spring onions, fennel, radishes and so on.
