Bread Salad

This salad, which in some areas of southern Italy is called panzanella or fresella, used to be made by my mother when she had bread left over that was a little stale. You can buy ready-baked fresella from an Italian delicatessen, but you can simply put some leftover bread in the oven to toast until very dry and hard.
