This recipe is like a cross between a fritter and an omelette.
Remove all the stems from the tiny white flowers. Pour the olive oil into a 20cm (8 in) non-stick frying pan, add the elderflowers and heat gently. Beat the eggs well, then add the lemon zest, flour, half the sugar and the salt. Pour the mixture into the pan and fry until the underside forms a crust and the top is almost solid.
