If using fresh chestnuts, cook them as in the previous recipe, and candy them. You could always buy a jar of chestnuts in syrup, or marrons glacés.
Drain the chestnuts from their syrup. Mix the sugar with the whipped cream and then fold in the liqueur. Make 3 quenelles from the mixture, using 2 dessertspoons. Place the quenelles on a dessert plate, and position a chestnut on top of each one. Do the same on 3 other plates. Pour over a little of the chestnut syrup, and decorate with the bay leaves before serving.
