Pappardelle is a larger version of tagliatelle, which can be bought readymade or prepared at home yourself. Its combination with ceps in the autumn is a must, or indeed with hare. Because ceps grown in Britain are sometimes less flavoursome than their continental counterparts, I use a few dried funghi porcini in this recipe for extra flavour.
